The creation of native-born chef Roberto Solís, Huniik Restaurant is his acclaimed fine-dining flagship in Merida and a shining example of Nueva Cocina Yucateca—the new Yucatecan cuisine.

In the 2025 ‘Best 50 Restaurants In Latin America’ awards, Huniik – which translates as ‘Unique Spirit’ in Maya – came in 32nd place.
Solís brings to Huniik the mastery he honed in renowned kitchens around the world, from Per Se in New York to Narisawa in Tokyo. Back home in Mérida, he also helms three additional restaurants, including Néctar, the groundbreaking spot that first placed him on the global gastronomic map.
At Huniik, diners are invited to embark on a taste-driven journey celebrating the aforementioned Nueva Cocina Yucateca which, it has been said, ‘seeks to represent and develop the region’s food and gastronomy by blending locality, tradition and culinary innovation’.
Behind its charming pink-accented townhouse façade, Huniik reveals an extraordinary interior crafted by Cuban artist Jorge Pardo. Stone walls echo the natural beauty of the Yucatán’s famed cenotes, while custom furnishings and art pieces draw inspiration from local artisanal traditions.
The small dining room is, at the same time, both intimate and refreshingly open with every detail, from the table décor to the menus, carefully considered.
From the open kitchen, Chef Solís and his team present a 10-course tasting menu that brings bold Yucatan flavours into contemporary focus. Each dish showcases the region’s distinctive, sustainably sourced ingredients such as yellowfin tuna with Yucatecan ponzu wrapped in a hoja santa or a vibrant dessert pairing mango with recado negro, coconut foam, and coconut ice cream.
