Ensconced within the 750 acres of what was once the Hacienda San Antonio Chable, one of many sisal estates that were found right across the Yucatan from the 19th century onwards, Chable Yucatan is not unique in having been converted into a luxury hotel. It just does it very, very well.
Stylish and luxurious accommodation
While the original hacienda buildings house the hotel’s public spaces, the 40 casitas and villas are sympathetic, new build structures that are set to the side and surrounded by the flora and fauna of the forest which is home to a wide variety of birdlife as well as deer.
All the luxurious rooms are spacious and open plan, come with large bathrooms featuring indoor-outdoor showers and glass walls, as well as a generous outside space including a plunge pool and hammocks.
A culinary adventure
Food and drink is also taken very seriously at Chable Yucatan with much of the produce coming either directly from the hotel’s own grounds or nearby, small scale farms. In tandem with this focus on local ingredients, both restaurants also lean heavily and unapologetically into regional techniques, flavours and traditions.
Ki’ol is the all-day, poolside restaurant that serves healthy (which is what Ki’ol means in Mayan), imaginative dishes while Ixi’im, housed within the former sisal factory, offers award-winning, fine dining and is amongst the most highly regarded restaurants in the Yucatan Peninsula.
In addition to its award winning cuisine, Ixi’im is also home to the largest private tequila collection in the world, with tutored tastings on offer for both experts and novices.
Wellness with the Chable difference
When it comes to relaxing, the hotel pool at Chable Yucatan certainly ticks all the necessary boxes. However, it is the hotel’s focus on Wellness, particularly wellness with a Maya slant, for which it is so highly regarded.
At the heart of the hotel’s Wellness offering, both physically and metaphorically, is its beautiful cenote. Far more than simply a picturesque water feature, the Maya view cenotes as being portals to the underworld, with profound spiritual significance. Exploring the Yucatan’s cultural highlights
While the majority of guests at the hotel will have no intention of setting foot outside the property, Chable Yucatan is ideally located for taking in a variety of nearby historic sites of interest. These include the nearby city of Merida, the Maya sites of Uxmal and the Puuc Hills and a number of old haciendas that have not been converted into hotels, such as the atmospheric Hacienda Yaxcopoil.
Those with an interest in nature should be sure to visit Celestun on the nearby Gulf Coast and, depending on the time of year, the opportunity to see flamingos in their thousands.
